Stigghiola: Grilled Intestines


If grilled veal intestines are too repulsive for you, but you like offal, then a tasting of the classic version of stigghiola, traditionally prepared from cleaned lamb intestines, might be the solution.

In this case, the very thoroughly cleaned raw lamb intestines are wrapped around the stalk of a young onion and cooked on a grill. Before serving, everything is cut into small pieces, seasoned with fresh parsley, drizzled with lemon juice, and sprinkled with salt. Unlike the veal intestine version, the preparation is much shorter, as lamb intestines are more delicate and thinner.

Stigghiola or grilled intestines cost approximately 5 EUR and can be found at any larger market, in Palermo for example at the historic Vucciria market.
