Marie B Restaurant: The Most Original Fine Dining in Prague

Marie B is arguably the most original fine dining restaurant in Prague and perhaps in all of Czechia. No exaggeration.

Spoiler Alert: At Marie B, you never know in advance what will be on the menu – not even when the food is already in front of you. The composition of each dish is revealed only after you’ve finished, through interaction with the staff. The entire experience is an exceptionally entertaining and intriguing game that I don’t want to spoil for anyone. That’s why I don’t describe the individual dishes in detail and only indicate the type of dish (vegetable, fish, meat) under the photos. However, the photos themselves may offer a few hints. If you want to keep the surprise absolute, I recommend not reading further and simply making a reservation at Marie B. It’s worth it.

Carte Blanche as a Game

At Marie B, you can forget about a traditional menu. Instead, prepare for a true experience in every sense of the word. The restaurant is built on the carte blanche principle, where guests arrive with no clue about which dishes await them.

There is no written menu, you don’t know the order of courses, and even as your dish is being served, you have no idea what exactly is on the plate. The ingredients remain a secret until you reach the last bite. However, you can jot down your notes on the back of the green card.

Then comes the moment for a conversation with the staff and the reveal of whether your guesses were correct. But there’s no need to be embarrassed if you don’t get it right – you certainly won’t be the first or last.

I visited Marie B alone, and only as I was leaving did I realize that for several hours I had been thinking only about the food – about the taste of each ingredient and what exactly was on my plate.

However, carte blanche is not for everyone. If you don’t like surprises, it’s better to visit La Degustation Bohême Bourgeoise ⭐, which is just a few dozen meters from here.

At Marie B, they have an alternative prepared for each course, but if you have really significant dietary restrictions, it’s best to ask in advance. The staff is absolutely professional even in this regard, and of course, they ask about dietary restrictions both during the reservation process and before the start of the tasting.

Wine and Non-Alcoholic Pairing

At Marie B, wine can be just as interesting an experience as the food. The wine pairing is created in close cooperation with the wine shop Vin de Marie, which shares the same space as Marie B.

Marie B is cheeky, bold, unconventional. The wine pairing can be just as unconventional. You’ll often encounter top natural wines, as well as organic and biodynamic bottles that shine in unexpected combinations with the food.

I chose the non-alcoholic pairing with the courses, which was flawless, interesting, and at times pleasantly unconventional (such as the combination of tomato juice and lemon balm). If you want to make the game with your taste buds even more challenging, you can optionally try to guess the ingredients in the drinks as well.

As a non-alcoholic aperitif, I let myself be recommended a glass of Von Wiesen Eisenkraut & Quitte, which I found delightful. If you think some non-alcoholic wines just taste like boring fruit juices, try this bottle and you might be just as pleasantly surprised by its interesting flavor as I was.

Deliberate Boldness

Strong personalities and an experienced team stand behind Marie B. The restaurant itself is informally described as the “younger, cheekier sister” of La Degustation Bohême Bourgeoise ⭐ (LDBB), and the connection is truly apparent.

The main figure is chef Jiří Šoura, who brings experience from the Michelin-starred LDBB and the legendary Alcron. The wine program is overseen by sommelier Zdeněk Oudes, and the staff is excellently trained – it’s a pleasure to interact with them.

Marie B and LDBB even share a common prep kitchen on Haštalská Street. And because Marie B is so bold, it can do things LDBB cannot. Among the ingredients, you may find wasabi or exotic fruit, things you would never see on the LDBB menu due to its strict focus on local suppliers.

The interior of Marie B was designed by the studio Olgoj Chorchoj; the space feels more like a club than a classic fine dining restaurant. Raw walls, neon artworks, and tagged entrance doors set Marie B apart from other establishments. The distinctive visual identity was created by Aleš Najbrt, and the neon installations are the work of renowned artist Anselm Reyle.

The Price of the Experience

The Marie B tasting menu in carte blanche style costs 2,150 CZK (86 EUR). With it, you can choose the Discovery wine pairing for 1,300 CZK (52 EUR), the premium Heritage pairing for 3,000 CZK (120 EUR), or a non-alcoholic pairing for 990 CZK (39,60 EUR). You can also complement your meal with bottled beer or a wine from the Vin de Marie wine shop.

Marie B proves that fine dining doesn’t have to be bound by rules. If you’re looking for an extraordinary gastronomic experience, you’ve come to the right place.
