Mlýnec Restaurant: Chef Láďa Vaníček

Prague is full of restaurants promising the “best view” and “traditional cuisine”, but you often end up in a tourist trap with overpriced goulash and a steamy window. Mlýnec is a different story.

It stands so close to the Vltava that you feel as if you could reach out and touch the pillars of Charles Bridge. Plus, it is included in the prestigious Czech Michelin Guide selection and the Gault & Millau guide.

The space is airy and elegant, but not so much that you’d be afraid to rest your elbows on the table. Large windows facing the Vltava act as a living canvas, projecting Charles Bridge in any weather.

The kitchen is commanded by Chef Láďa Vaníček, who focuses on Czech specialties prepared using modern methods. They serve the veal tartare freshly smoked, complemented by buckwheat, pickled cornichon cucumber, and yuzu mayonnaise (my tip!). They prepare the traditional Czech schnitzel as a veal filet mignon in breadcrumbs. If you prefer fish, a staple is the zander poached in butter with beluga lentils and horseradish.

At lunchtime, Mlýnec serves an affordable lunch menu. Weekends at Mlýnec then belong to brunches.

Mlýnec also knows how to do big evenings. Their New Year’s Eve menu is popular and tends to be sold out long in advance. The combination of top-notch food, wine, and a midnight view of the fireworks over the river is simply hard to beat.

What I particularly like about Mlýnec is the honest cooking in a setting that could easily be just a tourist attraction, but thanks to the people in the kitchen and on the floor, it is a restaurant you will want to return to.

Mlýnec Restaurant is my favorite Prague establishment with an incredible view of the Charles Bridge. This time, too, I tried their lunch menu. Mlýnec Restaurant is my favorite establishment in the center of Prague. As part of their lunch menu, I chose a strong beef broth, which reliably warms you up in winter. A juicy quail roulade with delicate pearl barley risotto was served as the main course. A sweet dessert at the end pleasantly concluded the whole visit.
