Maydanoz salatası is a traditional Turkish salad made primarily from fresh parsley. The salad is one of the favorite dishes of Turkish gastronomy. Thanks to its fresh taste, simplicity of preparation, and rich aroma, it is often served as an appetizer (meze) or as a side dish to main courses, particularly grilled meats and fish.

The base of maydanoz salatası is always fresh flat-leaf parsley, which must be high-quality, aromatic, and vibrant green. In addition to parsley, the salad typically includes tomatoes, sweet peppers, onions, and fresh mint. These ingredients are seasoned with freshly squeezed lemon juice, extra virgin olive oil, salt, optionally wine vinegar, and sumac.
In Turkish cuisine, maydanoz salatası is most commonly served as part of meze, a collection of small appetizers meant to be shared at the table. It was as part of meze that I had the chance to try it several times myself.
