Ezme: Spicy Turkish Vegetable Salad

Ezme is a spicy Turkish vegetable salad (dip). Its name comes from the Turkish word “ezmek,” which means “to crush” or “to mash.” Ezme is an essential part of Turkish cuisine, often served as an appetizer (meze) or a side dish to meat dishes. Ezme is popular not only in Turkey but also in other countries.

Ezme is made from fresh vegetables and herbs, which are always hand-chopped with a knife. The key rule when preparing ezme is that the vegetables are never blended, as the salad would become too watery and lose its characteristic texture. Proper preparation requires patience and precision while chopping.

The traditional composition of ezme includes the following ingredients:

  • Tomatoes: the main ingredient, providing sweetness and juiciness.
  • Green peppers: add mild crunchiness and a spicy flavor.
  • Onions: usually spicy white or red onions are used.
  • Parsley: fresh parsley leaves give the salad a fresh herbal aroma.
  • Chili peppers: add the distinctive spiciness that ezme is known for.
  • Garlic: deepens the flavor and adds a mild sharpness.
  • Dressing: a combination of extra virgin olive oil, lemon juice, pomegranate juice, salt, and sumac.

The salad is usually left to rest for a while before serving to allow the flavors to blend.

Ezme originates from Anatolia, where it was traditionally prepared as a side dish to meat-based meals. Thanks to its simple preparation and easily available ingredients, it spread throughout the country. Its spicy flavor and freshness have made it a favorite element of Turkish dining.

It is most commonly served with various types of kebab, köfte, grilled meat, or fish. Ezme pairs perfectly with Turkish ayran, a yogurt drink that balances the spiciness of ezme and the richness of meat dishes.

For me, spicy ezme salad is one of the most favorite Turkish side dishes to meat.
