Islak burger originated between the 1970s and 1980s in the Taksim Square area in the center of Istanbul. A popular legend credits the first recipe to Kızılkayalar Hamburger, which remains one of the most famous vendors of this dish. Islak burger quickly became a favorite late-night snack for locals and tourists, especially after visiting bars.
The burgers are fully prepared in advance. They are stored in heated boxes to keep them warm. Despite continuous reheating, they retain their juiciness.

Islak burger is also popular because it is a dish that you can order and get immediately. You can continue on your way right away, making it a typical Turkish street food.

I always get an ıslak burger from one of the stalls at Taksim Square, where it costs about 15 TRY (0.80 EUR). Although the name might not sound very appealing, it is not a “soggy” dish, and people who tried it on my recommendation were satisfied.
