Şiş Köfte: Grilled Minced Meat on a Skewer

Şiş köfte is a traditional Turkish dish made from minced meat grilled on a skewer. The word “şiş” in Turkish means “skewer” or “spit,” while “köfte” refers to patties or meatballs made from minced meat. The name could thus be loosely translated as “minced meat on a skewer.”

Traditional şiş köfte uses minced lamb or beef, seasoned with salt, black pepper, cumin, onion, parsley, and sometimes garlic or paprika. The prepared mixture is shaped into small, elongated rolls, which are then skewered onto metal or wooden sticks. The meat is grilled over an open flame or on a hot grill until it is cooked through and develops its characteristic smoky flavor and aroma.

In Turkey, şiş köfte is often served with local bread, accompanied by fresh vegetables or the bean salad piyaz. Bulgur is also a popular side dish. As for drinks, ayran pairs perfectly with şiş köfte.

Şiş köfte can be considered part of the broader category of dishes known as kebap. The term “kebap” in Turkish cuisine generally refers to various types of grilled meat. Şiş köfte clearly fits into this category, as it meets all the characteristics of a kebab—meat on a skewer and prepared on a grill.
