Kalam polo (کلم پلو, sometimes also spelled kalam polow) is a traditional Iranian dish combining rice and cabbage. It originates from Shiraz, the capital of Fars province in southern Iran. It is particularly loved for its strong flavor, aroma, and unique combination of ingredients.
The name of the dish consists of two Persian words: “kalam” (کلم), meaning cabbage, and “polo” (پلو), which refers to rice prepared in a specific way.

Kalam polo originates from Shiraz, a historic city famous not only for its cultural landmarks and poetry but also for its rich cuisine. The city of Shiraz has given rise to many traditional Iranian dishes, and kalam polo is one of the most well-known representatives of this regional Iranian cuisine.
Kalam polo is traditionally made from these main ingredients:
- Rice (preferably long-grain basmati) – forms the base of the dish and is usually cooked using the “chelow” method (partially pre-cooked rice finished by steaming).
- Cabbage (white cabbage) – sliced into strips, sautéed or stewed with spices and herbs until soft and flavorful.
- Herbs and spices – most commonly turmeric, saffron, cumin, pepper, and sometimes cinnamon.
- Onions – used as a base for sautéing other ingredients.
- Meat – most often beef or lamb, and less commonly chicken. Meat is not a required ingredient, and kalam polo can also be prepared as a vegetarian dish.
Kalam polo is traditionally served as a standalone dish, usually accompanied by fresh herbs. A favorite side dish is Iranian Shirazi salad (a mix of finely chopped cucumber, tomato, and onion, seasoned with lemon juice and mint), which I also received automatically with my meal.
I had the opportunity to try kalam polo at an excellent takeaway bistro in Esfahan that specializes in Shirazi cuisine (see Where to Eat in Esfahan). Since it focuses on take-away, I received it in a thermal container, but that didn’t detract from its excellent taste. One portion, including Shirazi salad and absolutely perfect caramelized tahdig rice that resembled parmesan chips, cost 850,000 IRR (1 EUR).
