Loz (لوز) is a traditional Iranian sweet made from ground almonds, characterized by its typical diamond shape. Loz is especially popular for its delicate texture, distinct natural flavors, and aesthetic appearance.

Loz is traditionally made from ground almonds, sugar, and rose water. The preparation starts by finely grinding the nuts into a delicate powder. The mixture is then combined with sugar syrup and aromatic rose water. The finished paste is evenly spread into flat molds and left to set. Once hardened, it is cut into the typical small diamond or square shapes.
The surface of the sweet is often decorated with pieces of pistachios, almonds, rose petals, or saffron. There are numerous variations of loz, where rose water may be replaced with orange blossom extract or saffron. Some recipes also include the addition of cardamom or coconut.

The most common and popular flavors of loz include almond, pistachio, coconut, saffron, or those enriched with dried rose petals (my personal favorite).
