Açma: Traditional Turkish Sweet Pastry

Açma is a traditional Turkish slightly sweet pastry, which is one of the favorite bakery products in Turkish cuisine. Açma has a round shape and is fluffy and soft. The surface of açma is usually shiny and golden brown, sprinkled with sesame seeds.

The dough is prepared in a similar way to other yeast-based baked goods, with sugar in the recipe giving the pastry its sweet taste. Açma, like simit, is widespread throughout Turkey and has become an integral part of the Turkish breakfast. It can easily be found in bakeries, patisseries, and street stalls across the country.

Açma is most commonly without filling, but there are also versions filled with ingredients such as kaşar cheese, olives, or pizza mixture. These filled versions are shaped like diamonds, but the dough remains the same.

One piece of açma pastry could be purchased during my visit to the city of Konya for 14 TRY (0.30 EUR).
