Toruń Gingerbread (pierniki toruńskie) is a traditional Polish sweet with a long history dating back to the Middle Ages. This gingerbread is inextricably linked to the city of Toruń, which is located in the northern part of Poland on the banks of the Vistula River. Toruń is nationally promoted under the slogan “The Gingerbread City,” which highlights the importance of this sweet treat to the city’s identity.

History of Toruń Gingerbread

The first mentions of gingerbread production in Toruń date back to the 13th century, when the city was part of the Hanseatic League and a major trading center. Due to its strategic location at the crossroads of trade routes, local bakers had access to rare ingredients, such as spices from distant lands. This allowed them to experiment and create a gingerbread recipe that became famous throughout Europe.

The popularity of Toruń gingerbread was so great that a saying emerged: “The four best things in Poland are: Toruń gingerbread, Gdańsk vodka, Warsaw boots, and a Kraków maiden.” This statement clearly shows the prestige that Toruń gingerbread had earned.

The Recipe of Toruń Gingerbread

Traditional Toruń gingerbread is characterized by its rich flavor and aroma, which it acquires through the use of high-quality ingredients and special spices. The dough is primarily made of rye flour, honey, and a blend of spices, which can include cinnamon, cloves, allspice, cardamom, ginger, and more. The exact composition of spices may vary according to the recipe, which each family or bakery carefully guards.

Originally, the gingerbread was called “miodownik,” which referred to its main sweet ingredient – honey. This honey was sourced from beekeepers around Toruń, while the flour was imported from Chełmno. The spices that gave the gingerbread its distinctive flavor came from far away – from Gdańsk, Germany, and even India, reaching the city via the Black Sea and Lviv.

The gingerbread is made in various shapes and sizes, ranging from small figures to large decorated slabs. The most common shapes include hearts, stars, or typical characters from fairy tales and legends. Some gingerbread is decorated with colorful icing or chocolate, while others are left in their natural state to highlight their texture and flavor.

The most popular type of Toruń gingerbread is “Katarzynki”, which has a unique shape of six interconnected medallions. Its origin is shrouded in many legends, one of which tells the story of a baker’s daughter named Kasia, who accidentally created this shape when she didn’t have the right molds and used a tin cup instead.

The Importance of Gingerbread for the City of Toruń

The city of Toruń is immensely proud of its gingerbread-making tradition and organizes various events and festivals dedicated to this sweet treat each year. The most famous is the Gingerbread Festival, which takes place at the end of August and beginning of September. During the festival, you can taste gingerbread from different producers, participate in workshops, and watch competitions in baking and decorating gingerbread.

If you visit Toruń, be sure not to miss the local gingerbread shops and cafes, where you can sample fresh gingerbread and other sweet specialties. Among the most famous is the Copernicus Gingerbread Bakery, but gingerbread can be purchased in dozens of stores in the historic center. I bought just four small pieces to taste, and 100 grams cost 5.79 PLN (1.40 EUR).
