Voloran aka stuffed eggplant rolls


Voloran is an Armenian appetizer, starring fried eggplant rolls filled with bell pepper, carrot, onion and tomato. Its preparation is simple. The eggplant is sliced into thin longitudinal slices, which are placed in salted water for 30 minutes. After this time, they are removed, dried and fried in oil. The vegetable mixture, dominated by carrot and bell pepper cut into thin, long strips, is also fried with onion, tomato and spices. The mixture is wrapped in eggplant rolls, decorated with, for example, dill and served.

Although it is a straightforward vegan dish, its taste is amazing. The vegetable mixture should be prepared al dente, meaning it should still be a bit crunchy. The combination of eggplant, carrot and bell pepper is perfect.

I had the opportunity to taste voloran at the Lavash Restaurant in Yerevan. One serving cost 2,200 AMD, which is approximately 5.20 EUR.
