Armenians are experts in grilling; their khorovats method is amazing. Alongside perfectly grilled meat, locals prefer grilled vegetables as a side dish. The most commonly used are eggplant, bell pepper and tomato.

After grilling, the vegetables are peeled and served whole, with a bit of butter. It’s up to you how you want to consume them. Armenians typically mash them on the plate with a fork to make a mixed salad, but you can also eat them separately. I always first taste them on their own, and I must say, the Armenian eggplant grilled using the khorovats method is the best I’ve ever had. The flavor is perfect, incredibly subtly smoky.

You can find pre-prepared vegetable (and meat) skewers in larger supermarkets, where they will also gladly grill them for you while you shop.
In the Lavash restaurant, one portion of grilled vegetables cost 2,000 AMD, which is approximately 4.80 EUR.
