As the name suggests, the main attraction of Pork’s is pork, which is prepared in various ways. The concise menu is designed to offer several dishes popular in Czechia; besides pork knuckle or roasted pork ribs, you’ll find, for example, a fried pork schnitzel or pulled pork in a buttered roll. The menu is rounded out by a few starters and desserts.

The cleverly designed menu allows for very quick service.

You’ll find plenty of reviews online that describe the pork knuckle from Pork’s as perfect, possibly the best you’ve ever had. And it truly is excellent! The skin is crispy, almost like cracklings, and the meat is juicy and practically falls apart.

I couldn’t resist asking about that incredible crispiness; apparently, the secret lies in a brief final roasting at a very high temperature.

The roasted pork ribs with cabbage salad or the pulled knuckle in a buttered roll with mustard mayonnaise, sweet and sour cabbage, and onions are also outstanding dishes, with everything disappearing from the plates very quickly.

No visit to a Czech restaurant would be complete without beer. Pork’s serves Pilsner and Kozel on tap, with a pint costing 75 CZK (3 EUR). The beer is perfectly poured and pairs wonderfully with the food, but honestly, I prefer to move on to the nearby Roesel Bistro after a meal and enjoy one of their craft beers, which they offer at a similar price.

The staff at Pork’s is friendly and efficient. The restaurant is large, so you’ll probably find a seat even without a reservation, but I still recommend booking ahead. The place has been featured in foreign guides, and there’s often a line of international visitors eager to try this pork delicacy.

The restaurant’s international fame is somewhat reflected in its atmosphere, with foreigners outnumbering locals during my visit, and the turnover of diners at the tables is quite rapid.

But the perfectly prepared pork knuckle is worth it.

Bon appétit!
