Paris-Brest: The Cyclists' Dessert

A choux pastry ring filled with praliné cream is named after a bike race from Paris to Brest and back - and it was created in neither of those cities. The version you hear most often credits the dessert to pastry chef Louis Durand of Maisons-Laffitte. I ate it in a Bib Gourmand restaurant in Paris, and I'll tell you what to look for in a good one.
