In 1990 Switzerland had 32 breweries. Today it has more than a thousand - more breweries per capita than any other country on earth. Behind that jump lies the collapse of a cartel that spent half a century dictating who was allowed to brew and what. From the lagers of the Feldschlösschen castle through Basel's Ueli, born in the country's first brewpub, to Chopfab, whose name doesn't mean what this article claimed for years.
What to Bring Back from Switzerland?
From Switzerland I bring back cheese above all: pungent Appenzeller, real Emmentaler from the Emme valley, Gruyère as the base for fondue and a tasting selection to help you find your favorite. Alongside them I pack birnweggen pear pastries, cured meats from the Italian-speaking canton of Ticino and a few bars of chocolate - milk chocolate was born in Switzerland, after all. You'll find nearly all of it in an ordinary supermarket.
Rivella: The Whey Soda from Switzerland
The Swiss took a liquid that cheese dairies once poured away as waste, turned it into a soda and promoted it to national drink. Rivella grew out of a whey beer recipe that flopped in America; it found its name in a railway timetable; and the colors on its labels aren't flavors but codes. In Basel I tried the blue one - the sugar-free version.
